InstructionsWash the cracked wheat twice and drain well

immediately. (If the cracked wheat soaks up too much

moisture, the taste will be bland. If rinsed properly,

the olive oil will soak into the wheat.) Mix in the

chopped green onions, tomatoes, parsley, mint,

pepper and allspice. Refrigerate for two hours. Just

before serving, add olive oil, lemon juice and salt.

Start with a little salt and lemon juice and add if need

be.
